For my second cupcakes I decided to try Oreo cupcakes, as they looked great! So I went to the supermarket for a Oreo box and started to work.
There's a lot of Oreo cupcakes recipe. I took that one from Cupcake Obsession and it was a good decision, because the cupcakes turned to be delicious, although they take more time to make.
So, here's the recipe:
Ingredients (makes 18 cupcakes)
Preheat oven to 160ºC (320ºF) and prepare a cupcake pan with cupcakes liners.
Crush the cookies. I started using a kitchen mallet, but it wasn't enough so I decided to use the coffee grinder. maybe it's not the most orthodox way, but it worked!
Beat butter and sugar until pale and fluffy, and then add the eggs. In a separate bowl, mix and sift the flour, the cocoa powder, the baking powder and the crushed cookies. Add it to the butter mixture beating at low speed. Finally, add the milk mixed qwith the vanilla extract.
Fill the cupcakes liners only 2/3 and bake for 20 minutes, until a toothpick inserted come out clean. Let cool.
For the buttercream:
Crush and sift the Oreos (don't miss this step or the nozzle will get stuck)
Beat the butter and until creamy and then add the icing sugar. Keep beating and finally add the milk, the vanilla extract and the crushed oreos until you have a good consistency mixture.
Fir that occasion I used a nozzle for the Chinese bazaar again, but it was "premium" range (it cost me 1.5 €). The result wasn't too bad, but it's far from what it should be.
Those cupcakes were amazing but... I used a hand blender for the buttercream. My arm hurts!! I need a food processor.
